Erin Boyle, Lead Recreational Class Chef Instructor – The Explorer Erin Boyle has run the gamut of the culinary world across the country. After graduating from the prestigious Culinary Institute of America in Hyde Park, New York, she’s worked as a restaurant and hotel chef, personal chef, a dietary chef, a baker, sous chef and more. She’s been in the kitchens of several restaurants for their opening, including Restaurant Marche and Trillium in New York State. Locally, she’s worked for Rioja, Elway’s in the Ritz-Carlton and was Executive Sous Chef at Root Down. Chef Erin shows her skills in menu planning with Cook Street’s new and exciting classes and shares her passion for food, love of cooking and fun sense of humor with our home cooks in the recreational program. Eric Lee, Recreational Class Chef Instructor – The Epicure Chef Eric Lee began his culinary career at the age of 14, working his way around this country as well as the U.K. with stints at The Smoking Dog and The Old Bell Hotel in England. In Colorado, Chef Eric was a proponent in the farm-to-table movement and has worked for The Kitchen in Boulder and Denver, The Full Moon Grill, Z Cuisine, and was a chef partner at Café Aion, the return-to-basics café in Boulder, which was featured in Bon Appetit magazine in 2010. Chef Eric brings a wide range of cooking styles and vast knowledge of global cuisine to Cook Street’s kitchen. Cindy OnkenGlimm, Wine Instructor — The Tastemaker Cindy’s passion for wine began in her former life with an oil and gas company when she was tasked by the firm to find vineyard land in Paso Robles, California, through seeing the completion of their winery. From there, she knew her life would change and she pursued wine training with the International Sommelier Guild, later becoming their instructor. With a Masters of Art in French, Cindy has studied and taught abroad, and has been an affiliate wine instructor with Metropolitan State University of Denver since 2008, as well as the wine instructor for Cook Street's Professional Program. Cindy is also a Certified Specialist of Wine with the Society of Wine Educators, and has her certificate in Winemaking from U.C. Davis. She is currently pursuing her Level I certification with the Court of Master Sommeliers. Thomas Allen, Wine Instructor – The Artiste Wine Instructor Thomas Allen began his culinary work at the Four Seasons Restaurant in New York City, where he immersed himself in the world of celebrity and haute cuisine. Following a stint at a specialty food store chain, he fell into a professional publishing career, and avidly pursued his primary loves — eating, drinking and being merry. When his career took him to Denver, he decided it was time to return to his childhood passion and entered the Cook Street 180° Culinary Program in 2008. A graduate of the International Sommelier Guild’s Sommelier Diploma Program and a Certified Specialist of Wine with the Society of Wine Educators, Thomas is currently working on his Certified Wine Educator accreditation and maintains a reputation as a true epicure among epicures. |
