Make a variety of classic cookies in this class to swap, take home and enjoy!  Students will gain an understanding of the role of ingredients such as flour, fat and sugar and how they work together in recipes. Menu: Chocolate Chip, Snickerdoodles, Shortbread and Brownies top

High Altitude Baking (Is It You Or Your Altitude?): Mile High Muffins and Cakes

Holiday Gingerbread Houses
Parents!  Kids!  Join Cook Street for a class that will create memories you will cherish for a lifetime! Cook Street takes the mess and hassle out of the holiday house-building tradition by providing gingerbread houses, icing and mounds of candy for decorating and tasting. Children must be accompanied by an adult for the duration of the class. top

From the fundamentals of flaky crusts and rich custard and fruit fillings to dazzling garnishes like chocolate curls and crystallized zest, you'll learn all the tricks and techniques you'll need to tickle your guests' taste buds! top

Classic Techniques: Essentials 1
Get an introduction to the fundamentals of classic cuisine. Perfect your knife skills, learn how to choose and store ingredients, increase your efficiency and improve your kitchen organization skills all while preparing sumptuous entrées. At the end of each class students will enjoy the menu they just prepared with new and old new world wines to help develop food and wine pairing knowledge.

Classic Techniques: Essentials 2
By popular request, Cook Street had added Classic Techniques: Essentials 2, a series of all new classes designed to expand your culinary knowledge and skills. Explore a whole new collection of delicious menus and learn new techniques. At the end of each class students will enjoy the menu they just prepared with new and old new world wines to help develop food and wine pairing knowledge.
Classic Techniques: Essentials I is not a prerequisite. Feel free to take these two classes in any order.

Prerequisite either Classic Techniques Essentials I or II.If you have taken Classic Techniques I or II and want more, this is the class for you. We take the techniques discussed in those courses and apply them to world cuisines.top

Charcuterie
Charcuterie, derived from the French words for flesh (chair) and cooked (cuit), is the branch of cooking devoted to cured and prepared meat products. This craft has come a long way since its inception as a preservation method before the advent of refrigeration. In this class, students will explore the art of charcuterie as they learn the techniques required to make their own sausages and confit. A dinner will be provided for Class One. The proceeds of Class One (Garlic Sausage, Bacon, Duck Confit) will be used during Class Two to build one of the dishes, Cassoulet. top

Cook Street gives pasta the respect it deserves!  Perhaps one of the most underappreciated pantry staples, pasta has the potential to be a culinary king of the kitchen!  Learn how to transform a simple box of it into a decadent yet easy gourmet meal. Each student will prepare two of the delicious dishes on the class menu.  Then, sit down and savor all of them with an appropriately paired wine and a seasonal dessert. American cooks have inherited a plethora of processes, tastes and traditions from all corners of the world. Small Plates
When a large meal is too much but snacking is just not enough, small plates are what you need. In this class, we will explore the world of tapas and petite desserts. Students will learn the techniques needed to make and serve dishes designed for smaller courses. As always, students will enjoy the meal they prepare with a great glass of wine. top

Knife Skills 101
This class packs it all in from beginner to specialized knife skills and techniques. You’ll learn the differences between a chef’s knife, paring knife, boning knife, scimitar and slicer. In addition, the class will discuss maintenance, sharpening, and construction of knives. This hands-on class will focus on working with fruits and vegetables as well as chicken butchery. Dinner will be prepared using ingredients the students cut. A dessert and wine will also be served. Menu: Garden Salad with Garnish, Minestrone, Chicken Madeira and Fresh Fruit Crostada top

Fine Cooking – Thanksgiving Feast
Cook Street and Fine Cooking magazine team up to get you ready for Thanksgiving.  Students will prepare a three-course holiday feast, see and taste the difference between a store-bought frozen turkey and a fresh heritage bird, and learn the secret to making the most important - and favorite - part of the meal - the gravy! top

Being single doesn't mean you are doomed to eat take out or fast food. Join the chefs at Cook Street as we show you how to make great meals for one. Students will enjoy the meal they prepare with a great glass of wine.

TASTE 5 ™
Join us for Taste 5 ™, an informal presentation of five fine wines paired with five fabulous foods prepared by Cook Street chefs. This class is a great opportunity to relax with friends, expand your wine knowledge and eat delicious food! Table seating at Taste 5 is “community-style” and is available on a first come, first-served basis. Tables may not be reserved. Limit 8 seats per registration. top

WINE 101
Everything you always wanted to know about wine but were afraid to ask! What it is, how to taste it and an
aroma/component seminar. Students will taste, examine and learn to describe six wines. top

WINE AND FOOD PAIRING SEMINAR
A "cause and effect" look at how wine interacts and reacts with food. Then, students will experience what they've
learned with a cheese tasting. Taste six wines, four cheeses and one cold plate that contains the five tastes in food -
sweet, sour, salty, bitter and umami. top

WINES OF ALSACE AND CHAMPAGNE
Two of the northernmost regions in France are the topic of this wine class. Learn how Champagne is made and
why it is famous the world over. Alsace, a small region bordering Germany, produces fabulous food-friendly whites.
Taste eight wines and enjoy a light snack. top

WINES OF BURGUNDY AND THE RHONE VALLEY
Explore the history and fine wines of Burgundy, home of the “wine of kings,” then to the Rhone Valley and nearby
Chateauneuf du Pape to taste the “wine of popes.” Students will taste eight wines and enjoy a light snack. top

WINES OF BORDEAUX AND THE LOIRE VALLEY
The Loire Valley has a great array of wines of every style – sparkling, white, red, rosé and dessert. Explore the
wines and history of this region. Learn about Bordeaux, one of the most recognizable wine regions in the world.

WINES OF SPAIN
From delicious sparkling and fortified dessert wines to fruity whites to big reds, Spain has it all. Get a fabulous

Spend the evening tasting wines from Tuscany, the heart of Central Italy, and Southern Italy, a wonderful place to

Tour of the wines of Northern Italy, including Barolo, Barbaresco and Barbera from the Piedmont. Other favorites
